The Magic Bean cake??
Sounds like something that was popular in the 60's right? Well.... if they named the bean in the title, most of us would have turned our noses up and it would be a lonely, unused recipe lost in cyberspace.
I know that when I heard that it was made with RED KIDNEY BEANS I immediately DID turn my nose up and passed on it. Until I heard person after person saying "oh the Magic Bean cake is SO delicious!".
After the fourth person said "oh, the magic bean cake is so deliciuos" I was intrigued enough to try it. Not just for me mind you.... I was having a few people over and thought I would use them as guinea pigs LOL.
Verdict? Oh! The Magic Bean Cake is SO delicious!! What is more, I can't believe it is gluten free! AND nut free!
Unbelievably, it is truly lovely. I had made some icing for it and dressed it with Strawberries to make it more "palatable", but there was no need - the cake is really quite rich and moist. Mind you, I like chocolate icing and strawberries... so maybe there IS a need LOL
You can make it with other beans, but as you read the recipe, you'll see that Chick Peas are a little too strongly flavoured. I did use the kidney beans, a friend/client has used borloti beans, and both are just wonderful.
ALSO - the first post after the recipe has some good hints, and the posts later on about flatulence? I've heard that it is the liquid that the beans sit in that causes that - rinse them well!
