Biggest Smile Apple Crumble

I am converting a recipe given to me recently by a wonderful friendly lady who has recently become a client/friend.  Why biggest smile?  Honestly, this LOVELY lady has the biggest, smiliest smile, it makes you feel all warm inside.  AS does this recipe!!


I suppose that there are hundreds of recipes out there for apple crumble... thousands probably.  But this is wonderful and I'm not going to look for anything else!


Just a note: the first part of the recipe calls for the use of the microwave.... naughty I suppose, you COULD use the thermomix steamer... but honestly, it is easier in the microwave because you are going to bake with the dish you use in the microwave AND you get all the yummy juices kept in.  If you are using the steamer - add the spices etc to the apples AFTER they are cooked and added to a casserole/baking type dish


Switch on your oven to 190oC

 

  • Peel, core and slice 750g of cooking apples
  • put in the bottom of a casserole/baking type dish.  I used a 20cm square corning ware dish
  • Over the slices of apple, sprinkle 
    • 4 tablespoons of sugar
    • 4 tablespoons of water
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground allspice
    • 4 whole cloves
  • cover and cook in the microwave for 8 minutes on high

In the mean time, ....
  • in your TM bowl add
    • 60g of brown sugar
    • 180g of SR flour
    • 90g of butter
    • 3 tablespoons of coconut.
  • Mix on speed 5 for 10 seconds
  • Then add 50g of rolled oats and mix on REVERSE for 10 seconds on speed 2 (you can add to the first step but then you don't get the yummy texture

Get the apples out of the microwave (good idea to take out the cloves now).  
Spread the topping over the cooked apples 
Bake for 30-40 minutes until lightly golden brown

 


LESSONS

 

  1. The ingredients here are 50% larger than the recipe I was given... what can I say... I LOVE apple crumble.  Actually, there is enough here for 4-5 large serves.
  2. The crumble is lovely and crumbly - the Thermomix makes it so absolutely light and delcious - and there is heaps of that.... but if you want the crumble larger, I think you can just increase the amount of apple - maybe need to increase time cooked in microwave - just check

HINTS - john and I were talking about this recipe as we (ok, ok - maybe I was the only one licking my lips QUITE that loudly) and we were thinking this recipe would be lovely with different fruit s- remember though, if you are changing the fruit you might want to look at the spices - cinnamon etc goes well with apple... but rubarb??
  • Fruit suggestions
    • apple / raspberry
    • pineapple - on it's own or with other fruits like banana, passionfruit and mango for a tropical crumble
    • Apricot
    • Strawberry!  Apple and Strawberry!!

What?  Photo??  Sorry - in our bowls and covered with ice cream and down our gullet WAY too fast!  Just pretend you are smelling yummy, cinnamony apples and eating them with a glorious light, crumbly, scrumtious topping with vanilla icecream all melting around it.... hope that helps.
