I've HEARD of the raw food movement.... my thought? Raw food.... raw? RAW? Does that mean like.... RAW? But I don't like the idea of uncooked food!!!
Heard someone say something like that? Thought that yourself? I must admit I put it under the heading of "rabbit food" and didn't think too much more of it!
A few weeks ago I was visiting a colleage and good friend, Danielle. I was mentioning a recent binge on a sugary substance.... and she went into full "Mum" mode and I heard all about slow release sugars as apposed to the "empty" calorie versions.
To top it all off - she brought out a container from the freezer and cut off a small piece of this chocolately thing and I was expected to eat it.... FROZEN! I stared at it for a while - trying to decide whether I was happy it was a small piece, or I thought she was being stingy....... but decided to give it a go. To my shock and horror... it was delicious! And that tiny piece she gave me? Was plenty!
Once at home, I looked at the recipe, and then decided to give it a go myself. The next day I got some ingredients and made it. The first thing I have to say is that it was QUICK to make! I didn't clean the bowl between the layers, just scraped it all down well, and it was all done and dusted in a matter of minutes.
Did I use all the ingredients? Well, most of them. I just used a good cocoa rathe than the Lucuma powder. And golden syrup because the maple syrup I THOUGHT I had - seemed to have dissapeared....... John do you know anything about that??
The big test? John! I gave him a piece after dinner - a small piece - and waited. He took a bite - a less hesitant bite than my first bite at Danielle's place - and declaired it a winner.
The recipe? I'm going to put it here (below the pic). I have done a bit of searching for it - and although Danielle attribitued it to Two Rawsome Sistas - I have found an abundance of versions and variations of this recipe all over the web. I guess the lesson there is..... get an idea of how it is made... and then make it with ingredients you enjoy eating!

Caramel Raw Slice
1 cup almonds
1 cup Medjool dates
Whizz up into a crumb consistency. Press into slice pan and put in freezer.
3 tabs of cashew or coconut butter
3 tabs melted coconut oil
3 tables Lucuma powder
2-3 tabs of coconut nectar or pure maple syrup
Pinch of Himalayan sea salt
Gently mix together then spread over the base. Put in fridge
50 grams of cacao butter
3 tabs of raw cacao powder
1-2 tabs of coconut nectar or pure maple syrup
Pinch of Himalyan sea salt
Spread over the top of slice and then refrigerate or freeze to set.
