Butter Chicken

We're not often at an Indian restaurant, but I do love my butter chicken, I couldn't wait to try it.


First of all, we had to get all the spices - thought it would be expensive, but I bought 9 packets of spices at Central Market for less than $6 and then some cinnamon sticks.... I was off.


First of all, make the Garam Masala.  Now, I had never  heard of garam masalla before, and I have NEVER made a spice mix from scratch.  Couldn't have been easier.  Gee it smelt nice!  What a lovely combination of spices!


Then the butter chicken.  I had concentrated on what spices I needed so much... I forgot the other ingredients LOL - so I substituted tomato paste for tomatoes and added some peanuts to the cashews to make up the weight and made do with a little less chicken than it says in the recipe.


Still... fantastic.  There was plenty for John and I - even though we were starving - and then I put two lunches away AND had plenty of sauce left over to mix with some 2 minute noodles for a light meal that night.


Time consuming?  Well... we had 1 1/2 hours to make the garam masala, the butter chicken, pack for a demonstration, have a shower, cook the meal, get dressed and pack the car.  We did it all with 1/2 an hour to spare... so the answer is no, despite it being a little more complicated than the rissotto - it is quite quick to make.  Even quicker next time because I already have the garam masala :-)
