Wartime Gingerbread

Well..... this isn't out of the cookbook, so I am digressing a bit from my intention to just talk about the cookbook that comes with the Thermomix.

BUT... this has been one of my, and my family's, favourite recipes - so I thought I would take a stab at converting it :-)

Warm up your oven to 220oC

Wartime Gingerbread

125g of butter

155g of sugar

- cream together for 30seconds on 5

125g of golden syrup

1 egg

- add and blend for 30 seconds on 6

250g of plain flour

1 rounded teaspoon of ground ginger

1 rounded teaspoon of mixed spice

1 small teaspoon of carb soda

3/4 cup of sour milk

add to bowl and mix for 30 seconds on 6

Let it sit for a few mintues

pour into a tin 19cm square 

put in oven and IMMEDIATELY turn down oven to 180oC

Let it cook for up to an hour.  Don't rush it.

Leave it in the tine for a few minutes to cool when it comes from the oven as it is very soft and easily broken

HINT: John doesn't like gingerbread (WHAT is wrong with the man!!!) so I just substitute cinnamon.  Still yummy

HINT: this time I actually USED sour milk (had some I had forgotten about) but it does work very well with normal milk too :-)
