lemon Meringue Pie

Lemon Meringue Pie... a favourite for most of us... the bane of anyone who makes it.  Not that it is tricky... but boy is it time consuming!  However, with the Thermomix it makes it really quick and easy!


Another easy chuck it in and pour it out recipe!!


HINT: I used the short bread recipe for the base - VERY NICE - make sure it is nice and thin or you won't be able to cut it LOL.  It didn't go soggy or let the lemon curd go through


LESSON: I would put a little more lemon juice in next time... I like it a little more tart - this was beautiful tho!!


The observant amongst you may notice the lack of meringue in the following picture.... it was just too pretty to put it on (Actually... I forgot to do it straight away and got distracted LOL)

hooley dooley! I'd love that myself!!!!!! There is a recipe in the "Lunch Box and After School Ideas" little cookbook for caramel slice - but after checking that I see that it uses condensed milk. The alternative is to make your OWN condensed milk! The posts won't let me put in the full address, but add WWW to forumthermomix.com/index.php?topic=2347.0 and go to the recipe that way. An other option is to use light condensed milk (or is that lighter fat and not lighter sugar??)

Thanks so much for a speedy reply. Would you believe my daughter dreamt of Lemon Meringue pie and asked for it today? I got my Thermomix 5 weeks ago then fell sick, so now I'm feeling better, and armed with gorgeous free-range eggs from a friend I'm determined to experiment. Her dreams match mine exactly. And I love shortbread bases, so thanks for the inspiration.

Btw, have you ever heard of Millionaire's Shortbread? Jamie Oliver did a recipe once (shortbread base, caramel layer, then topped with chocolate) but I've lost the caramel recipe. Could you advise of a reliable and delicious Thermomix caramel recipe? I prefer them not super-sweet, like the pure condensed milk method - any suggestions?

Thanks Amy, This was one of my very first posts - and I was just going to work through the EDC - so it didn't occur to me to mention where I was getting the recipe from. As I kept going and got recipes from other areas I did start to mention. As a rule of thumb I suppose if you don't see the reference, it'll be the EDC :-) . Really sorry about that - really appreciate your comments!!

Well I just worked out that EDC is the main book supplied with the Thermomix purchase. Silly me. Do you usually make a reference in your reviews to which cookbook the recipes came from? I'm new to all this, but yours is the kind of website that I really appreciate - thanks.

Hi Amy, Thanks for your comment - sorry - this post was one of my very first and when I was just going through the cookbook that comes with the thermomix in Australia, the Everyday Cookbook. The recipe is in there. The only difference I made, was using the shortbread recipe for a nice crunchy base. B

The lemon meringue pie is the one recipe I rave about when promoting the TM to others. I have made it 3 or 4 times and each time it has been a success. So, so easy!
