Lemon Meringue Pie... a favourite for most of us... the bane of anyone who makes it. Not that it is tricky... but boy is it time consuming! However, with the Thermomix it makes it really quick and easy!
Another easy chuck it in and pour it out recipe!!
HINT: I used the short bread recipe for the base - VERY NICE - make sure it is nice and thin or you won't be able to cut it LOL. It didn't go soggy or let the lemon curd go through
LESSON: I would put a little more lemon juice in next time... I like it a little more tart - this was beautiful tho!!
The observant amongst you may notice the lack of meringue in the following picture.... it was just too pretty to put it on (Actually... I forgot to do it straight away and got distracted LOL)
