Wicked Fudge

This is Delicious!!  And dead easy - although I would encourage you to change the recipe a little - see hints and lessons below.


Although it has so much sweetness in it, it is actually not that sweet and although more-ish, you can be  happy with one small slice.  Keeps well too... if it lasts long enough LOL

HINT/LESSON: I'm torn between what this could be categorised under, hint or lesson, so lets have both :-)


The recipe calls for you to "cook" the chocolate and milk at 100oC.  That worried me, it was WAY too hot for chocolate I thought, so I did it on 60oC and it worked out fine BUT....


LESSON: if you use 60oC, it cools down very quickly so when you are stirring in the nuts and fruit, it is forming a solid before you finish mixing it.  so, I would suggest that you set it again on 60oC while you are stirring in the fruit and nuts :-)
