I had been put off doing the Puff Pastry recipe (from the Everyday Cookbook) because it called for dripping - yuk!
However, yesterday I really needed some so I thought I would try it, but put in JUST butter - adding more butter instead of the dripping.
It was quick... easy... and delicious! It was MUCH nicer than the puff pastry that you buy in the shops. It didn't Puff as much, but was incredibly flaky - more like a croissant or a danish pastry texture. In fact, I had some left over after I put what I needed on my chicken pie, so I made a sweet version with jam, strawberries and sugar - rolled and cut into little swirles and then cooked. Delicious! even more like a danish pastry with sweet things in it!
Give it a go! This is a winner.
Make sure everything is as cold as it asks for, and to refrigerate it for the length of time requested. Basically - prepare it at least 30 minutes before you need it.
