I just wanted to remind you that there is no better time to get this sauce underway. It is SO easy and SO cheap to make (at the moment with everything so ripe, ready and cheap) and SO SO delicious!
I had some beautiful plums given to me by a wonderful Nonna at a demo recently (That one was a Hoot!!) and after stuffing my face with them, I made a double batch of sauce!
It's ok to do a double batch at once (no more tho). Leaving the Measuring Cup on will leave you with a runnier sauce. Leaving it off will make the sauce thicker, but may splatter everywhere (especially if you do a double lot) SO... if you are doing a double lot and want a thicker sauce, put the basket (the one you do the rice and/or eggs etc in) on the TOP of the lid while cooking and it will allow the steam to escape but stop the splatters.
Really! there is no reason why this can't be done by anyone. I put the ingredients together in the thermomix while John was making us a lovely plunger coffee... and then Thermy did it's stuff while we had coffee and watched TV.
Another hint.... to sterilise the jars, put water in them (about 1/3 full) and then put them in the microwave and boil them for about 5 minutes (add the time it takes to GET to boiling - use hot water from tap to hasten it). When the microwave dings.... lay the lids on top and then leave them (with door open) for 5-10 mintues. This is also a great way to clean the microwave as the steam loosens all the stuff and is easy to wipe off
