Johnny Pork

The name excapes me at the moment for the region this would be similar to... you know, Turkey / Morroccan -ish - SO... I've named it Johnny Pork - John will kill me when he sees it LOL


Of course people familiar with John and I know that HE is the cook.  I follow recipes.... he makes up recipes and just KNOWS what to do.  Here is another recipe he has made up.


Heat up the oven to 180oC


1-2 Pork Fillets (can use chicken)


slice them 2/3rd of the way through lengthways (Butterfly) and spread open.  Put on oven tray, lined with some baking paper.


Handfull of apricots

Handfull of dates

handfull of pistachios


Put them into the Thermomix and blitz them for 10-20 seconds on 9.  Use this to stuff the Pork (or chicken) and then close.  You don't need to tie them closed with twine or silicon elastic bands but you can if you want to.  put in the oven and cook for 20 minutes or until cooked.


AND.... this is where John got even more inventive... while that is cooking.  


1 - Cook some rice in the Thermomix - using the juice of a lime in the water - when cooked put in your thermoserver until ready.


2 - make up some Hummus (everyday cookbook) BUT - use peanut butter instead of Tahini AND add 1/2 cup of water AND THEN heat up to 90oC.  This is the gravy!  


I would have never thought of, in essence, runny hummus for gravy, but it was delicious!  Add a teaspoon of curry powder and it would be a healthy satay sauce!
