I know that I have already posted a recipe review on the date and honey loaf from Tenina, I just wanted to let you know that it is something I now make it at least once a week, sometimes twice!
Why? John loves it and often has it for brekky. And why not? It isn't high in processed sugars, it does - however - have dates which are high in fibre and tastes fantastic!
What John doesn't know, is since he started having it for brekky, I have modified the recipe to make it even healthier for him.
1 - I add 50g of Chia seeds to the mixture (if you do this, add another 70g of milk or the Chia seeds will soak up the milk and make the loaf a little dry)
2 - instead of 30 grams of the original recipe's "spelt flakes" or the rolled oats I replaced it with, I was adding 30g of almonds and grind them first.
I have also tried using a mixture of dates AND apricots (just stick to the 200g of fruit in total and it's fine) and that is delicious too!
My last attempt was just dates, but instead of cinnamon sugar, I added 3 tsp of instant coffee powder. Yum!!
