Long, mexican pizza

I was at a Thermomix function a couple of months ago, and a person brought this to share (amazing what gets brought to share when THERMOMIX owners get together!)

What a great idea.  She basically, made a long pizza base - then covered the middle with some taco flavoured mince (cooked in the thermomix... of course) do NOT buy the additive laden packets, get a dry mix recipe from your favourite recipe place - there are heaps online.  Try this for an example.  And cheese of course.  and then baked it.

When it came out of the oven she topped it with blobs of sour cream sprinkled with paprika and sprinkled it also with chopped corriander. How easy!!!  especially if you have any left over mince.

It was SO yummy, it looked great, but more importantly, it was SO easy to share.  We all just had a skinny slice (or two).

I wish I knew who actually brought it (it was a BIG gathering) so I could acknowledge her here, but.... you know who you are... good on you!!
