This was the first time I have EVER done a marble cake - don't know why I left it so late!!! it was easy and a particularly nice cake! It was lovely and soft, really moist and tasty.
LESSON: when swirling, the knife swishing around just wasn't enough, dig in a knife (or better yet a fork) and then flick it up. That actually mixes it up. Do that a dozen or so times
LESSON: I cooked it in too small a tin. Use a tin around 25cm square (I don't have a ruler handy, so about that size) That way it cooks in a good time and the edges aren't dry by the time the middle is cooked.
HINT: why not try vanilla / strawberry and choc? would take a bit of fiddling I guess, but boy it would be pretty!
