Of course you have to like apricots to like this icecream - but if you do.... WELL worth making.
The recipe is from Taste.com.au website and I will give you the link in a bit... after I have given you some rather major changes to the advice given on the site.
First of all - This is easy and yum! Make it!
Secondly - The advice given is to let freeze for 2 hours and then she used her ice cream machine? WHAT? I don't want to seem rude... but you have a Thermomix!! Chuck out your icecream machine!
MY ADVICE: (and what worked very well for me) is - let mixture freeze for 6-10 hours until quite firm but not frozen solid. Using a spoon, put the almost frozen mixture back in the Thermomix bowl and blend for 10-20 seconds on speed 9. Then put back into the container and put in the freezer. it stays soft and scoop-able.

LESSON: The apricots were still a bit "bitty" if only blitzed for 4 seconds after cooking. I suggest going longer until you get a smoother paste.
