Yiros Marinade (Souvlaki, Kebab)

One thing I learned when I moved over to SA, was that while we are all Aussies, each state has it's very own take on things - ie: language!  What I had enjoyed in Victoria - yummy Souvlaki's, served in Turkish Bread - were called Yiros here and served in soft pita breads. They're Kebabs elsewhere.... our own mini version of dialects.

What are they?  Basically, cooked marinated meat, mixed with chopped tomatoes, cheese, garlic sauce and what ever takes your fancy (I like it with avocado, john with extra onions and since a trip to Turkey we both like gerkins with it too) and all rolled in tortillas or pita bread.  (check out my tortilla recipe here)

We were looking for a nice Yiros seasoning and I did a bit of research and came up with a whole lot of very similar looking recipes, all with something different.  I looked at the recipes available and made a base recipe and then tried 6 different variations for john to try... I made a small batch of each one and let his educated palette do it's thing.  He chose one and and we tried it.  YUM!!!  I just have to share it with you.


  • 500 Grams Lamb strips  
  • 1 Lemon, juiced
  • 50ml white wine vinegar (use white wine if that is what you have)
  • 3 Teaspoons Olive Oil 
  • 2 teaspoons salt 
  • 2.5 teaspoons garlic powder (ground dried garlic. OR use 2 fresh cloves instead)
  • 1 teaspoon ground white pepper 
  • 3 teaspoons smoked paprika 
  • 4 teaspoons oregano  
  • 2 quartered onions

  1. grind anything you need to grind... eg dried garlic and/or white pepper *
  2. (if you are using fresh garlic, add cloves to bowl and chop on speed 7 for 2-4 seconds)
  3. add onions and chop on speed 7 for 2-4 seconds.  Scrape and do again if you like smaller onion pieces
  4. scrape down the bowl
  5. add rest of ingredients
  6. Stir on speed 1 for 15 seconds to combine.
  7. Add meat and stir on REVERSE for 10 seconds, remove from bowl and let it sit for at least an hour - longer is better - overnight is best.

*NOTE: you will be more successful with your grinding if you have at LEAST 4 or 5 tablespoons of things like white pepper to begin with. Grind enough to fill a small container and use the rest another time.

You can cook the meat in the Thermomix (100oC, REVERSE, 10 minutes, or until cooked), or on the BBQ or in a saucepan for similar time.

Serve as a side dish with a salad, or on Pita Bread, Flat Bread, Turkish Bread etc with all the trimmings.  

I like to make Tzatziki to have with our Yiros rather than just the garlic sauce... it's basically the same but can be used for dips before hand also.
