Chia pudding

It all started with a brilliant photo of this almost desert like picture I saw on Quirky Jo's fabulous website


Chia pudding.... seemed such an easy thing... Jo had put up a basic recipe and was inviting people to come up with their own.  The more people were posting their ideas, the more I was willing to give it a go. So, off I went, soaking some chia in some almond milk.

Now - rest assured I did NOT do any NEAR as fancy a recipe as some of the ones entered, in fact I didn't even do Jo's recipe.  The truth of it was, I didn't expect to like it so I didn't want to go to too much trouble.  I used half the recipe amount of almond milk and chia, then added some toasted flaked almonds and some cranberries and that was it!

3 days later I am still looking at this goo in the fridge and decided I have put it off too long already so today was the day!!

I didn't do much in regard to putting it together.  I had the goo - then frozen raspberries and a little raw sugar - then goo - then the raspberries & sugar again - then the goo and then 3 rasp to top it off to make it look pretty.

Now, I am NOT a fan of milk - yes, I know this is almond milk - but no only am I not a milk fan, I am also not a custard fan, a rice pudding or bread and butter pudding fan.  All that gooey wobblness.... ewww!

So this basic layered chia pudding sat.... and sat.... and sat.  It was 3 HOURS before I could get enough courage up to try it... and of course I was dissapointed.... IN MYSELF!  It was delicious!!  Where I expected it to be gooey it was just delightful and I finished it in record time!!  ( am STILL not going to try custard! Shudder!)

My verdict.  Really delightful.  really easy - as Jo says, the basic goo (oops, sorry, Chia Pudding) lasts in the fridge for a week and you can make it as fancy or as easy as you like.  Give it a go.  Don't let the long list of ingredients put you off, do as I did and make a basic one to get the hang of it and see if you like it!  It'll be worth it!!
