Cranberry & Coconut Museli Slice (Ann)

This recipe was adapted from a Donna Hay recipe by one of my clients.  What a great recipe Ann!  Thanks!!


  • 35g Plain Flour 
  • ½ tsp ground Cinnamon (I freshly ground some sticks mmm…;) 
  • 270g Rolled Oats 
  • 40g Shredded Coconut 
  • 100g Pumpkin Seeds 
  • 130g Dried Cranberries 
  • 180g Butter 
  • 160g Honey 
  • 80g  brown Sugar 
  • 1 tsp Vanilla Extract 


 Pre heat oven to 160o C. Place butter, honey, sugar & vanilla in TMX bowl 2mins 60 spd 1-2 or until melted & smooth. Add remainder ingredients, combine using kneading function (approx. 1min or till all combined). Press into lined 20 x 30 tin. Cook 35 – 40 mins or till golden brown. Cool in tin 

The above is the recipe as Ann sent it to me - me being me... decided to change it a LITTLE bit.  I didn't have as much cranberries as required so I did 1/3 each of dates, apricots and cranberries.  Also, not a fan of pumpkin seeds - so I used sunflower seeds.  So basically, the same recipe with a tweak!  It was delicious!!  John, who is not a fan of overly sweet things, LOVED it - but had to fight me for it LOL.
