Millionaire's Shortbread

Amy left a comment on Lemon Merangue post - about Millionaire's Shortbread.  She described it as shortbread base, caramel layer and choc top.  Sounded fantastic so I tried it!


She also asked about a low sugar caramel - I also did that and that's the next post.


How to make this delicious shortbread??


Easy - make the Shortbread from the EveryDay Cookbook - the one you get with the Thermomix - and then - when cold - spread a little caramel then squiggle on some chocolate.


HINT: don't put too much caramel - it makes it TOO sweet - besides, it's Millionaire's Shortbread, not shortbready caramel :)

LESSON: I tried both solid choc top AND squiggly - but a) squiggly looked better and b) easier to eat and c) it looked better.  I know I said that twice, but the squiggly lines looked nice and it also showed the caramel beneath so it is worth a second mention LOL

LESSON: cut shortbread in small pieces - these are quite rich

LESSON: Read and follow the hint in the recipe - it says to cut the schortbread straight from the oven and WAIT.  Then, when a bit cooler (I waited 15 minutes) THEN take out and cool on a wire rack.
